Funkify your Pumpkin Spice Latte this Fall

Funky • adjective (FASHIONABLE). slang. fashionable in an unusual and noticeable way.

It's fall and warm colors, spices, and drinks dot our stores, wardrobes, and beverages. The crowd pleasing Pumpkin Spice Latte is a high demand accessory to our lives this season. Is it even possible to Funk it up?

In the JointFit kitchen all things are possible! This funky twist on a fall morning drink will delight your taste buds and warm your heart and soul.

They key to a Funky Fall Latte is starting with Funky Chicken Coffee, an earthy but balanced roast from Red Rooster Coffee in Floyd, Virginia.

In their words The Funky Chicken is a complex yet unique cup that delivers the bright acidity and caramel sweetness of a medium roast and the smooth chocolatey earthy mouth feel of a dark. (Available here).

The next key is brewing it well! I have tried many methods in my day, Coffee maker, French Press, the Keurig, etc... Recently I picked up a 4 cup Bodum pour over set up from Walmart at a very reasonable price. Ever since I've been grinding my own beans I've been pouring out consistently great coffee.

The last key to this funky fall beverage is fat. I love starting my morning with a beverage that fills me up, warms me up, and starts my metabolism up. I put generous amounts of butter, coconut oil, milk, and cream and blend this unique concoction up into frothy goodness. It fills me up enough to head out to the trails on. Of course you can't forget the pumpkin spice seasoning!

Give it a try and let me know what you think! It's so funky good that it is going to be a year round staple in my home!

Ingredients:

4 T Funky Chicken Coffee (I'm a decaf queen)

1/4 C raw milk

2 T heavy cream

1 1/2 T grass fed butter

1 1/2 T coconut oil

2 t pumpkin spice

Sweetener of choice (I love monkfruit but have been using splenda recently)

Instructions:

1. Grind your coffee to a medium roast following your grinder's instructions.

2. Place in pour over drip basket and cover in boiling water.

3. When your coffee is done throw it in the blender with the remaining ingredients and blend until frothy. About 30s.

It may take a few extra minutes in the morning but beleive me it's worth it! It is so good you might even do the Funky Chicken!

Enjoy.
